Maple syrup is produced by concentrating the sugar content in maple sap from approximately two percent to at least 66 percent. Traditionally, sugar concentration was achieved by boiling maple sap in large open-pan thermal evaporators. Reverse osmosis membranes are used to pre-concentrate maple sap prior to boiling, shorting the production time for the finished product.
